Instructions
Wash and dry the courgettes, then slice them into thin rounds, about 1/4 inch thick.
In a large mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper.
In another bowl, whisk the eggs until fully combined.
Dip each courgette slice into the egg mixture, then coat with the flour mixture.
Heat vegetable oil in a deep skillet over medium-high heat.
Fry the coated courgette slices in batches for 2-3 minutes on each side until golden brown.
Remove fritti and drain on paper towels.
In a food processor, blend feta cheese, Greek yogurt, lemon juice, and fresh herbs until smooth.
Serve the fritti hot with the creamy whipped feta dip.
