Ingredients

Courgettes

  • 3 medium Courgettes Fresh and firm, sliced thinly.

Coating Ingredients

  • 1 cup All-purpose Flour For coating.
  • 1/4 cup Cornstarch For added crispiness.
  • 1 teaspoon Salt To enhance flavor.
  • 1/2 teaspoon Black Pepper Freshly ground.
  • 2 large Eggs For binding.
  • 2-3 cups Vegetable Oil For frying.

Whipped Feta Ingredients

  • 200 grams Feta Cheese For the creamy dip.
  • 1/2 cup Greek Yogurt For creaminess.
  • 1 tablespoon Lemon Juice To brighten the dip.

Fresh Herbs

  • to taste Fresh Herbs (Parsley or Dill) For added flavor.

Instructions

  • Wash and dry the courgettes, then slice them into thin rounds, about 1/4 inch thick.
  • In a large mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper.
  • In another bowl, whisk the eggs until fully combined.
  • Dip each courgette slice into the egg mixture, then coat with the flour mixture.
  • Heat vegetable oil in a deep skillet over medium-high heat.
  • Fry the coated courgette slices in batches for 2-3 minutes on each side until golden brown.
  • Remove fritti and drain on paper towels.
  • In a food processor, blend feta cheese, Greek yogurt, lemon juice, and fresh herbs until smooth.
  • Serve the fritti hot with the creamy whipped feta dip.

Notes

For variations, consider adding spices to the flour or using different vegetables.
